Synopsis

Nick's Bistro is TV3's brand new fly on the wall series following Nick Munier from Hell's Kitchen, and Stephen Gibson, former head chef of Dublin's Michelin Star restaurant L'Ecrivain, as they set up their new Dublin restaurant.

Nick was born on 4th August 1967 in Kent to English Mother & French Father. He is now married with 3 boys.

 

After catering college Nick started working in:

 

1985 - 1987

The Roux Brothers, as a Commis Waiter to Chef de Rang working in Le Poulpot, Le Gavroche & The Waterside

 

1987 - 1988

Military Service, France

 

1988 - 1989

Eastwell Manor Hotel, Ashford as Sommelier

 

1989 - 1990

The Great House at Sonning as Asst Restaurant Manager

 

1990 - 1991

Le Talbooth, Colchester as Restaurant Manager

 

1991 - 1993

The K Club, Kildare, Ireland as Restaurant Manager 1 Michelin Star & Hosts to 2006 Ryder Cup

 

1993 - 2002

Nick's career took off when he began working with Marco Pierre White, as Restaurant Manager / General Manager

The Hyde Park - 5 Years

The Oak Room - 2 Years until Marcos Retirement

Criterion Brasserie - 1 Year

The Belvedere, Holland Park - 1 Year

 

In 2002 Nick moved back to Ireland where he started as Restaurant Manager in Irelands only 2 Michelin Star Restaurant Patrick Guilbaud

 

2003 - 2006

The Clarence Hotel owned by U2, as Restaurant Manager / Food & Beverage Manager

 

During the end of 2006 & the first half of 2007, Nick was consulting on 3 restaurants during set up in Dublin; Bon Appetit in Malahide, The Village at Lyons, Tony Ryans Estate in Dublin & Ivans Oyster Bar & Grill in Howth Dublin.

 

In September 2007, Nick became General Manager at L'Ecrivain Restaurant, Dublin, 1 Michelin Star.
